The taste of fresh crunchy cucumber, pungent flavor marinated and pickled cucumbers is perfectly known to all. But not everyone tried a cucumber … fried. Moreover – not everyone suspects about existence of a similar dish! This option of preparation of cucumbers was from China. Fried cucumbers are a part of many exotic dishes.

Cut segment of garlic thin plates. In a deep frying pan or a wok heat oil. Put garlic and chili pepper in oil. Fry on strong fire, constantly stirring slowly. There is enough 30 seconds. At once add sesame, cucumbers and a spoon of a soy-bean sauce. Fry cucumbers 2-4 minutes on strong fire.

Ideally fire has to be not just strong, and represent a column of an open flame. The cook holds a frying pan over fire and stirs up it. But on home cuisine, unlike restaurant, you shouldn't make such experiments.

There are various variations of this dish. For example, cucumbers can be nastrugat on a grater thin slices. It is necessary to fry these circles or ovals no more than a minute as they are too thin. One more interesting option which is slightly changing taste of fried cucumbers and adapting them to the European taste – keeping before frying within 20-30 minutes not in salt, and in to sweep away from salt and vinegar with sugar.
