Drying of berries - a great way to keep favourite fruits for the winter and a worthy alternative to freezing or conservation. Dried berries have no chemical preservatives that keeps their useful, tasty and natural long months. Scoop a handful of dried berries, mix with favourite yogurt, granoly, myuslyam or strew a fruit salad. To enjoy these delicacies, berries need to be dried up correctly.

Instruction

1. Bilberry, blackcurrant, raspberry, blackberry, a wild strawberry and a bird cherry are ideal for drying. Sort berries and carefully wash out them in cold water. Select only dead-ripe, not too soft berries. Don't use fruits with spots, damages.

2. To keep color of berry, process it in a special way before drying. There are several ways to make it: 1) Part 2 tablespoons of ascorbic acid in 1 liter of water, wet in solution berry for 10-15 minutes.2) Weld honey syrup from 3 glasses of water and 1 glass of sugar. Warm and add 1 glass of honey. Well mix. 3) Process berries juice from mix of 1 liter of pineapple juice, 1 liter of warm water and ¼ glasses of lemon juice. In any of these mixes berry it is necessary to soak a small amount of time. After processing don't wash it with water.

3. Pour out berry in one layer on the baking tray which is previously covered with two layers of a gauze or a cotton towel. Warm an oven to 140 degrees, leave a door open that steam could go out of the oven. Periodically check berries and overturn them. Fruits have to become dried, not elastic. Drying in such mode will be required till 10 o'clock.

4. It is possible to dry berries as follows: put them in big open pots and put to the warm, dry, well aired placement, for example, on the attic. Mix one or twice a day within 10 days. Berries will dry in 2 weeks.

5. If you are going to store berries a long time, it is possible to pasteurize them to destroy all larvae of insects. For this purpose at the final stage of drying freeze berry for several days in the freezer or warm up up to 175 degrees in an oven within 10-15 minutes. These methods it is used also for subdrying of the dampened berries and dried fruits with already appeared bugs.

6. Put dried berries in dense packing, a container or to bank with a glass cover and you store in the cool, dark place. In the fridge it is possible to store dried fruits only in summertime and in very sealed package as there it is too damp for them and dried fruit are capable to absorb foreign aromas.
