1. For freezing it is possible to use only fresh mushrooms which didn't begin to spoil yet. At first sort mushrooms (different types of mushrooms are frozen separately.). Then take off hats at cepes, birch mushrooms, aspen mushrooms, slippery jacks and mossiness mushrooms. Leave honey agarics intact. Cut champignons.

2. Wash crude mushrooms with cold water. If mushrooms not really dirty, it is possible just to remove from them large garbage (leaves, branches, etc.), and then to wipe accurately with a wet sponge or a rag.

3. Before freezing it is desirable to boil mushrooms. It is possible to freeze mushrooms without preliminary boiling, but in this case they can taste bitter. On boiling of large mushrooms you need 25-30 minutes, average and small mushrooms – 15-20 minutes. Also mushrooms can be cut small, then on their boiling no more than 10 minutes will leave.

4. Boil water in a pan, add to it salt and a little citric acid. Gradually fill up mushrooms in the boiling water and you cook them on average fire. If to make fire too strong or too weak, mushrooms will become either rigid, or flabby that, undoubtedly, will have an adverse effect on their taste.

5. When mushrooms cook, filter water. Then let's mushrooms cool down and dry. For this purpose spread out them a thin layer on baking sheets, trays or kitchen towels and leave for 30-40 minutes.

6. Divide mushrooms into disposable portions (hats and legs of mushrooms are displayed separately), spread out them on plastic bags and whenever possible you will squeeze out air of packages. Put packages of mushrooms in the freezer.
