Honey lollipops soften a sore throat, are tasty and useful. As well as usual lollipops which do of sugar do honey lollipops of boiled syrup. It hardens when cooling, keeping that form which it took in liquid state. Preparation of lollipops can seem difficult process, but for this purpose it is necessary to stir slowly only syrup and to watch temperature. 

For the beginning confectioner there are several councils to try.

In order that make honey lollipops, will be required to you:

 - baking tray;

 - parchment or wax paper;

 - pan with thick walls;

 - 200 g of sugar;

 - 65 g of honey;

 - 2 tablespoons of water;

 - volumetric glass;

 - wooden spoon;

 - food thermometer;

 - 2 teaspoons of lemon essence;

 - measured bucket;

 - sticks for lollipops.

1.      Cover a baking tray with a layer of parchment or wax paper. Put a baking tray to such place where it will be near at hand.

2.      Put honey, water and sugar in a pan. Put on a plate on average fire. Heat mix, constantly stirring slowly until all kristallik of sugar are dissolved.

3.      Attach the food thermometer to an internal wall of ware and increase fire. Let's mix begin to boil, without stirring and without touching a pan. Continue to boil until temperature reaches 150-155 °C. Mix has to be transparent citreous color.

4.      Remove a pan from fire and pour mix in a heat-resistant measured cup or a bucket. Quickly add lemon essence by means of a wooden spoon.

5.      Put balls of hot mix on the prepared tray. Try to give them as much as possible rounded shape and that they were no more than 5 cm in the diameter. Spread out sticks so that one end lay in future lollipop. Twist sticks that their ends were in the cooling-down syrup. So lollipop won't fall from a stick when it is eaten.

6.      Let's lollipops cool down, at least, 30 minutes before removing them from a tray. Wrap up each lollipop in wax paper or a film to store.
