1. Take long-grain white rice. This grade has no own bright aroma and will well absorb meat fluids. You shouldn't use steamed and round grain rice. The first can remain tough, the second – will turn into porridge. Several times wash rice with flowing water to its full transparency. Fill in with cold water. Salt a little. Boil until ready. Cast away on a colander that excess liquid flew down.

2. While rice cooks, make forcemeat. Traditionally quenelles do of two grades of meat. Pork will give to forcemeat juiciness, and beef – taste saturation.
