The squash is rather universal vegetable. It can be fried, extinguished, baked. From pulp of a squash it is possible to cook fragrant cream soups, to do tasty fritters or casseroles. But this simple vegetable also is suitable for preparation of more exotic dish for a holiday table – squash orientally.

Squash orientally: ingredients

This little unusual dish, very gentle and fragrant. Its stuffing bears a faint resemblance to pilaf which is cooked in Central Asia. To prepare this squash dish, it is necessary to take:

- 25 grams of couscous; - ½ teaspoons of a desi;

- 1 small squash; - 1 tablespoon of the squeezed-out lemon juice (or a lemon half);

- 1 tomato of the average size; - 3 pieces of dried apricots; - 1 stalk of green onions; - parsley greens; - 1 tablespoon of almond shaving; - 1 crude egg (yolk); - 1 teaspoon of olive oil; - Cayenne pepper; - salt.

All products are calculated on one portion.

Preparation of squash orientally with couscous, dried apricots, almonds and a Cayenne pepper

At the first stage of preparation of a dish you will need to mix couscous from 50 ml of a little added some salt water, to put on a plate and to bring once to the boil. Then it is necessary to remove couscous from fire at once and to leave for 5 minutes that grain inflated. Take a fork, add a desi and to mix everything. The small dairy squash should be washed up and to cut accurately lengthways in half. Then follows a teaspoon very accurately not to damage gentle walls of a squash, to choose its pulp and to chop it small cubes. Then it is necessary to sprinkle halves of a squash lemon juice.

It is also possible just to grate squash pulp largely. In this case too juicy weight will turn out. It it is necessary to wring out and merge excessive juice a little.

It is necessary to wash up and cut tomatoes of the average size in cubes, and to chop a feather of green onions ringlets. You will need to cut dried apricots pieces too and to add to tomatoes and onions. Parsley greens need to be washed up too and to chop small. Instead of couscous you can use long rice, only it will almost need to be boiled until ready in advance.

Warm an oven to 200 wasps and bake in it stuffed vegetable marrows within half an hour. Ready squash can be decorated with fresh greens. Also to them it is possible to serve sour cream sauce.
