1. Prepare ingredients. Carefully wash up a baking plate flowing water tomatoes, pepper and carrots. From tomatoes remove a green core, from the Bulgarian and hot pepper - seeds and a tail. And peel carrots, onions, garlic and horse-radish.

2. Cut them on small pieces which will be convenient to be overwound in the meat grinder or the food processor. Don't pour out the tomato juice following when cutting tomatoes at all – it will also be added to adjika.

3. Overwind all vegetables via the meat grinder. It is better to do it in gloves not to spoil a hand a sour tomato and also burning pepper, garlic and horse-radish. It is better to overwind the last ingredient in general in well aired room, before a window, and it is even better – on the street as tears from it will be provided. The overwound vegetables should be poured out in a big pan or a basin in which they can be cooked.

4. Put mix on fire, bring to the boil, reduce fire and you boil within 3 hours. From time to time adjika it is necessary to mix and watch carefully that it didn't burn.

5. For half an hour before the end of cooking add salt to taste and one and a half glasses of a sunflower purified oil. Then once again well mix and cook longer the remained time.

6. While adjika cooks, prepare banks and covers for rolling of seasoning. As to eat such quantity quickly difficult and the infused adjika has more pungent flavor, it should be rolled up in banks immediately. For this purpose put covers in the boiling water for 15-20 minutes, and put cups a neck over the boiling water down. Perfectly the usual teapot with uncovered will be suitable for sterilization of tanks.
