Sauces add to dishes special savor. You can prepare them independently or buy a jar from the famous producer in supermarket – everything depends on your culinary abilities and a dish which you plan to give. However sometimes a part of sauce remains unused. How to keep it without prejudice to gustatory qualities?

1. If you need to keep ready sauce for two-three hours, put it on a water bath. Don't assume that liquid began to boil – it will worsen its taste. Sauces on an egg oily base don't heat higher than 60 degrees, otherwise they will be stratified.

2. Do you want to keep home-made sauce for longer term? Cool it at the room temperature, pour in a clean glass jar with a skintight cover and put in the fridge. The mixes prepared on the basis of meat, fish, mushroom or vegetable soup are stored about a week. Dairy and creamy sauces keep the qualities no more day.

3. Home-made mayonnaise is stored 2-3 days, and the same sauce with addition of mustard – to 6 days. By the end of this term mix doesn't spoil, however its gustatory qualities significantly worsen. You watch that pieces of foreign products didn't get to the sauce removed on storage – from such additives it can turn sour.

4. Sauces of industrial production keep the flavoring properties much longer – of two months about half a year. Place them in the lower section of the fridge. It is better to replace metal covers with more reliable glass or rubber. If sauce is packed into a can, shift it in glass or porcelain capacity and densely close it.

5. Don't open all packings bought for the future. Put the closed cups to the storeroom or buffet and uncork only after the previous packing is spent. Consider that the less preservatives in a product, the term of its storage is shorter. Removing opened to bank in the fridge, surely read the label – terms during which the product can be eaten are specified there.

6. The shortest term of life at natural tomato paste and freshly cooked horse-radish, and industrial mayonnaise, ketchup and mustard can be stored very long. The natural soy-bean sauce also concerns long-livers – the open small bottle can stand several weeks provided that it will be densely closed.
