Today all necessary ingredients for making sushi and rolls can be bought in specialized shops and to prepare them in house conditions. However, very few people know how it is necessary to store rolls that they weren't spoiled too quickly.

In shops of Japanese cuisine, sushi and rolls are stored in special show-windows. Many visitors consider that the products which are stored on such show-windows are stale and, perhaps, spoiled. However such opinion is wrong. Show-windows are equipped with the special evaporator interfering drying of fish and rice therefore they not only cool products but also support the necessary level of humidity. But even sushi and rolls can be stored in such hi-tech equipment no more than 3 hours then they become unusable.

Many, buying rolls in shops, move away them in the fridge and use only several hours later or next day. Quite often spiteful responses and complaints to products of shops and restaurants of Japanese cuisine become result of such wrong storage of rolls. However, it is possible to avoid similar unpleasant consequences if to follow a number of simple rules at storage of rolls.
