The sweet and tasty dessert ""Тулумба"" traditionally moves to coffee or tea and is one of the most popular dishes in the Balkans and in Turkey.

1. Prepare syrup for a tulumba: mix 120 g of water, one tablespoon of the concentrated lemon juice and 120 g of sugar in a saucepan, having put on fire, bring to the boil.

2. Then boil thoroughly syrup within 15-20 minutes on slow fire periodically stirring slowly. Remove from fire and cool to room temperature.

3. Make custard paste for a tulumba. Put butter or margarine in a pan, pour in 220 ml of water, put on fire and bring to the boil.

4. Add ¼ teaspoon of salt to the beginning to boil mix and enter gradually 200 grams of flour, carefully mixing. Boil thoroughly dough two more minutes, it has to separate well from pan walls. Then remove from fire and cool.

5. Enter gradually into flour mix three large eggs, shaking up eggs on one and well kneading after everyone. Homogeneous, brilliant, smooth mass has to turn out.

6. Fill the confectionery syringe with the test and squeeze out pieces about 5 cm long. Fry tubules in hot fan. For this purpose warm vegetable oil in a frying pan and fry test pieces from two parties till ruddy color. Oils has to be quite a lot that pieces of the test floated and sank in the boiling oil.

7. Roll in ready tulumba in the prepared lemon syrup that they well became impregnated. Lay out cakes on a dish.
