1. Prepare eggplants the average sizes. Wash vegetables in flowing water. Dry a kitchen towel, having saved, thus, from excess moisture. Clean each eggplant from a thin skin if you love with a skin, don't clean. Cut on a cutting board each vegetable in the form of bars. Put preparations in a deep bowl.

2. Wash out the eggs made for the recipe in warm water. Break on one egg in separate capacity, add salt, mix. Fill in with ready egg mix pieces of eggplants, again mix. Leave products, having covered with a towel or a cover, for 1-2 hours. During this time eggplants will start up juice, will a little darken.

3. Prepare onions. Exempt it from a peel, wash out and dry a towel. On a cutting board cut it in the form of straws.

4. Heat a frying pan together with a small amount of olive oil. At will it is possible to use sunflower oil. Lay out the cut onions on a hot frying pan. Fry it till golden color.

5. After onions lower pieces of eggplants in a frying pan. Extinguish products on big fire within 2-3 minutes. Further reduce fire, cover a semi-finished product.

6. Prepare eggplants with taste of mushrooms within 20-30 minutes. During this time products have to get an appetizing crust. Don't forget to stir slowly periodically a dish. In 5 minutes prior to the end of cooking lay out sour cream in bulk, mix it with eggplants.

7. The original dish is ready, cool, give to a table.
