What role of enzymes in digestion

Enzymes play extremely important role in digestion. They are produced by a pancreas, glands of a stomach and a small intestine and also salivary glands. Partially enzymatic functions are performed by intestinal microflora.

Instruction

1. In order that the proteins received from food, fats and carbohydrates could be used as construction material for creation of new cages, they have to be transformed to simpler connections. This function is performed by digestive enzymes - they split difficult components of food on more simple substances which are easily acquired then by an organism. Health and life expectancy of the person depends on the correct work of digestive system and sufficient production of enzymes.

2. Enzymes are divided into the following main groups: proteases (peptidaza), lipases, karbogidraza, nucleases. Proteases split proteins on short peptides or amino acids, lipases split lipids on fatty acids and glycerin. Thanks to nucleases from nucleinic acids nucleotides turn out, and thanks to karbogidraza from carbohydrates (starches, sugars) turn out simple sugar (glucose). Also digestive enzymes are produced by the microorganisms living in a human large intestine. So, colibacillus helps lactose digestion, and lactobacilli will transform carbohydrates (in particular, lactose) to lactic acid.

3. Enzymes not only are produced in a human body, but also come to it together with food, first of all with raw vegetables and fruit. When food contains enough enzymes, its digestion is considerably facilitated as the organism spends much less own enzymes. To the contrary, the lack of enzymes of food creates increased load on an organism, forcing it to spend more energy for digestion of food. Heat treatment at a temperature of 118 °C destroys enzymes in products, and in semi-finished products they are absent initially. Frying, cooking, suppression, freezing/defrosting, sterilization, pasteurization, processing in the microwave oven, preservation deprive food of enzymes.

4. High load of a pancreas and other digestive bodies promotes their accelerated wear. The people who are constantly eating only thermally processed food especially fried can suffer from a meteorizm, a lock, a diarrhea. They are in group of the increased risk of developing of such diseases as diabetes, arthritis, obesity. More often people at young age have these problems. In what diet fresh vegetables and fruit prevail, have more chances to keep health and to prolong youth.
