Way of preparation:

  • Beef tongue is washed thoroughly.
  • By means of a knife or a brush the scurf is cleaned off.
  • At the same time on a plate the pan with water to which after boiling it is necessary to add the black pepper crushed in a mortar, two bay leaves and salt to taste is put.
  • Then the prepared beef tongue should be placed in the boiling water. It needs to be cooked until ready within 2-2.5 hours.
  • The next stage of preparation of a dish is preparation of mix from spicery. For this purpose it is necessary to clean segments of garlic and to crush them. It is necessary to add dry spicy herbs and ground black pepper to the received garlic weight. All ingredients carefully mix up.
  • The boiled beef tongue is taken out from a pan and cooled in cold water. After language cooled down, from it it is necessary to remove a film. Then it is placed in a pan with broth, its preparation which remained later again, and put on a plate where bring to the boil.
  • Beef tongue should be taken out from broth and to cool slightly. After it cools down, it should be cut thin pieces which then roll in ready mix from spicery. Spicy weight should be put so that pieces of language were densely covered.
