How to make red currant

Berries of red currant contain a large amount of vitamin C, but because of enough firm small stones aren't often used for preparation of various dishes. And it is necessary to wring out only juice from red currant and to cook compotes, jelly, sauces, kissels on its basis.

It is required to you

  • Kissel from red currant:
    • berries of red currant (1 glass);
    • strawberry (1 glass);
    • granulated sugar (1 glass);
    • potato starch (4 tablespoons);
    • water (3 glasses).
    • Red currant jelly:
    • red currant (200 g);
    • granulated sugar (5 tablespoons);
    • gelatin (25 g);
    • water (600 ml).

Instruction

1. Kissel from red currant. Touch berries. At currant remove all branches, peel strawberry from fruit stems. Put berries in a sieve and wash out.

2. Wring out juice from red currant and strawberry. It can be done on the electric juice extractor or wipe berries manually through a small sieve. You will throw out cake from a sieve, and leave juice and puree in a bowl.

3. Pour water in a pan and put to be boiled. Put in it granulated sugar, stir before full dissolution.

4. Dissolve starch in glass with water and pour in the boiling syrup. Take on fire still a couple of minutes. Constantly mix that kissel didn't burn.

5. Remove a pan from fire and implicate berry puree in hot weight. Cool and serve kissel in ice-cream bowls.

6. Red currant jelly. Prepare juice from berries of red currant. Put it in the fridge. Fill in the remained alburnum with boiled water and boil thoroughly on slow fire of 5 minutes. Filter broth through a small strainer.

7. Fill in gelatin with cold water and let's it bulk up within an hour. Then put in a bucket on fire and bring to full dissolution. Liquid has to turn out absolutely transparent.

8. Add granulated sugar to the filtered broth and again bring to the boil, sugar has to be dissolved completely. Remove a saucepan from fire.

9. Pour in it in the dissolved gelatin through a strainer and juice from berries of red currant. Stir the turned-out liquid.

10. Pour jelly on ice-cream bowls or wide glasses. Put to stiffen in the fridge. Give on a table, watering from above with whipped cream.
