How to preserve tomatoes

There are many storage techniques of tomatoes which allow to enjoy their taste not only in summer, but also in winter time. Tomatoes pickle, salt, do of them juice, puree and many other things. Preservation in own juice is one of ways to keep taste and advantage of a tomato.

It is required to you

  • tomatoes;
    • currant leaves;
    • horse-radish leaves;
    • fennel;
    • parsley;
    • garlic;
    • sugar;
    • salt;
    • bay leaf;
    • peppercorn;
    • sharp capsicum;
    • glass jars.

Instruction

1. Carefully wash up vegetables. Touch tomatoes, having postponed small and elastic fruits separately from large. Cut large tomatoes on several parts and miss via the meat grinder. If there is no meat grinder, it is possible to use the blender.

2. Pour out the received tomato juice in a pan. On each liter of juice add 2 tablespoons of sugar and 1 tablespoon of salt. Put juice on fire and you boil 15-20 minutes. If there is a lot of tomato juice, instead of a pan it is possible to use a clean metal basin.

3. Sterilize banks and covers. For this purpose carefully wash up them and establish on an oven lattice. Include an oven by 160 degrees and leave in it banks for 10-15 minutes. Banks shouldn't adjoin with each other. This way is convenient when it is necessary to sterilize several jars. If it is necessary to process one or two banks, it is possible to use a teapot. For this purpose put on to bank a nose of the boiling teapot and leave for 15-20 minutes. Put the processed cups on a clean towel a bottom down. Lower covers in a clear water and you boil 20-25 minutes. Clean nippers take out covers from water and put to banks.

4. Lay on a bottom of each can 4 leaves of currant, 3 bay leaves, on 2 branches of fennel and parsley, 4 garlic gloves and 5-7 peas of pepper. Fill banks with small tomatoes and accurately fill in them with boiled water. In 20 minutes merge boiled water from cans. It is for this purpose convenient to use a cover with an opening.

5. Fill in tomatoes with the boiling tomato juice and put on one hot pepper in each can. Densely close banks the sterilized covers. Carefully turn banks upside down and wrap up them a blanket. After banks completely cooled down, remove them to the cool place.
