Black bread - a classical product which is eaten practically by all. Especially it is good if to prepare it independently in house conditions. Such delicacy will be pleasant to everyone!

Preparation of home-made black bread

You need ferment to make this bread. In spite of the fact that yeast is added directly to dough, it is used all the same, generally for aroma.

Ferment requires the following:

- 370 g of rough rye flour; - 370 g of purified water;

- 20 g of yeast. Other ingredients for preparation of home-made black bread include: - 283 g of rye grains (for them in addition 283 g of water); - 243 g of rough rye flour; - 30 g of water; - 17 g of salt; - 56 g of seeds of sunflower; - 6 g of instant yeast.

Make ferment of the specified ingredients and leave it for day at the room temperature. Remember that for preparation of bread in house conditions it is necessary to use water which doesn't contain chlorine. Mix rye grains and water in a separate bowl. If you got bold kernels, place them in the blender or the coffee grinder and crush within 30 seconds. For this period they won't be crushed in flour, and will just be shattered into pieces. Leave grains in water at the room temperature at 16-18 hours. Later the specified time, mix ferment with other components for the test and carefully mix. Add all other ingredients, including seeds of sunflower and the soaked rye grains, knead dough about 10 minutes. Then leave it 10 minutes indoors then again level (it will change a form because of growth of yeast). Create loaf and place it in the form which is well oiled and sprinkled with flour. Dough for black bread very sticky therefore carefully sprinkle with flour all surfaces which contact to it and also the hands. Cover the loaf which is laid out in a form with a flour layer, cover with a polyethylene film and let's bread rise within an hour in the warm place. It will seem strange, but bread at this stage will grow a little.

How to bake bread
