How to kindle chocolate on a water bath

Often such expression occurs in culinary recipes - "kindle on a water bath". Beginners, inexperienced in cookery, can refuse preparation of any dish, without knowing that the water bath can be built easily at themselves in kitchen by means of make-shifts.

  • It is desirable to take chocolate dark grades with the high content of cacao butter
    • Two containers of the different sizes for a water bath
    • Wooden scapula

Instruction

1. Take two containers of different diameter. And, that that it is more, has to be metal because it should be heated on a plate. You can take two pans of different diameter, as shown in a photo.

2. It is better if the second capacity is from stainless steel, but it is possible and to use glass heat resisting ware. Walls of tanks shouldn't be very much high, otherwise it will be simple to you to kindle chocolate inconveniently. Pour into the capacity of the bigger size a little water and put on a plate to heat up. Capacity of the smaller size has to be absolutely dry inside.

3. Break a chocolate bar and put on a bottom of this capacity. Put it in another where water heated up already enough, but isn't brought to the boil. Water shouldn't reach walls of container with chocolate, otherwise it can get inside. It is optional to bring water to the boil. Sometimes it is enough to maintain water temperature about 70-80 ºС.

4. Kindling chocolate on a water bath, constantly stir slowly it. It will help it to be kindled evenly. For stirring it is better to use a wooden scapula. Temperature of the kindled chocolate shouldn't exceed 40-45 ºС, otherwise at the subsequent hardening on it the white scurf can be formed.
