Mushrooms – a wonderful gift of the nature. From them cook great soups, do tasty second courses and snack. Mushrooms can also be prepared for the future, for example, having salted. Salty milk mushrooms, saffron milk caps, coral milky caps – a remarkable dish. They are very good also in itself and as components in various salads. However quite often soon after salting the mushrooms begin to grow mouldy. How it is necessary to salt correctly them to avoid this trouble?

Conditions of a pickles of mushrooms

Indispensable conditions which you have to observe at preparation of mushrooms it is clean ware and a strong brine. Remember that the glass jar where mushrooms will be put is cleaner, the it is less than chances that they will grow mouldy. Therefore the bank should wash up carefully hot water with use of baking soda. Then well wash out it and sterilize water vapor.

Then make concentrated solution of table salt. Gradually add salt to water and stir until the next portion of salt doesn't cease to be dissolved. Boil this solution.

It is possible to salt mushrooms also in the wooden, ceramic or enameled ware, but it is better to use glass jars with a capacity from one liter.

To properly stack mushrooms in bank when salting

Densely stack previously prepared mushrooms in sterilized to bank by the lamellar party up. When thickness of a layer reaches 4-5 centimeters, salt mushrooms (moderately, you still will fill in them with a strong brine), put the thin cut segments of garlic, a fennel branch for improvement of taste and aroma. Then again densely lay a layer of mushrooms of the same thickness and repeat the described procedure. You can also add pieces of leaves of horse-radish, a pea of a black pepper and spices to taste.

If you salt conditionally edible mushrooms, for example, milk mushrooms or coral milky caps, it is necessary to soak them previously 2-3 days, changing water, for removal of caustic lacteal juice.

After bank it is almost completely filled by mushrooms, fill in them with the boiling strong brine so that they were slightly covered with liquid. In the same brine moisten a clean cotton rag and cover with it mushrooms. And from above put a wooden circle of such size that it passed in a neck of glass capacity. This circle playing an oppression role has to be from a tree of deciduous breeds, for example, of a linden, birches. Before laying it needs also to be filled in with the boiling brine. To bank with mushrooms densely close a cover (metal, plastic or glass). Wait until its contents are cooled to room temperature, then remove in the fridge. Approximately in 40-45 days the mushrooms will be ready-to-serve. There is nothing difficult in the described way, but it protects from emergence of a mold practically from 100% reliability.
