Rules of cooking of shrimps

In shops, shrimps of 2 types are on sale: freshly frozen and cooked and frozen. They can be distinguished on color. The shrimps who underwent before freezing to heat treatment have reddish color. It is necessary to cook them less, than freshly frozen seafood.

It can be black and allspice peas, a carnation, bay leaf, a thyme, fresh or dried fennel, parsley, lemon segments or juice, garlic gloves. Lower in the boiling added some salt water with spices of a shrimp. As soon as they redden and will emerge on a surface – seafood is ready. Time of cooking of shrimps depends on their amount and a way of freezing. For cooked and frozen shrimps 3-5 minutes there are enough, for fresh-frozen 7-10 minutes are necessary. It is important not to overdo seafood on fire, otherwise they will become rigid and tasteless. After cooking of a shrimp it isn't recommended to get from broth at once, and it is necessary 15-20 to take minutes in broth, then seafood will turn out more juicy and tasty.

In the same way tiger and royal shrimps cook. They quite large and, as a rule, are on sale freshly frozen therefore from 5 to 10 minutes cook. Before cooking wash out tiger and royal shrimps under flowing water. Then pour in cold water in a pan, bring it to the boil and salt. If shrimps cook in an armor, it is recommended to take 40 g or 2 tablespoons of table salt on 1 liter of water if shrimps cook cleaned, then salt should be taken less – 20 g on water liter. Add some spice to salt solution to taste and as soon as water begins to boil, lower shrimps. Again bring water to the boil and reduce fire to a minimum. In 5-10 minutes when shrimps become red color and will emerge on a surface, remove a pan from fire. Drain water, and shrimps drench with cold water. After that they will easily be cleaned.

How to cook squids

Squids need previously to be defrozen. It is necessary to do it on air or in cold water (from hot water meat of squids gains pink color and changes taste). Then remove at them a chord and remove a thin skin, similar to a transparent film. For this purpose lower carcasses of squids for several seconds in the added some salt boiled water. Pour in cold water in a pan, bring to the boil and add some salt. Lower in the boiling water of squids and you cook on weak fire literally 2-3 minutes. As soon as meat turns white, take fillet in water even of seconds 10 and catch a skimmer. If squids to digest, then their meat will become "rubber" on taste. Therefore some advise, having lowered fillet of a squid in the boiling water, to count to 30 and to catch. Then also for 30 seconds to lower the second fillet.
