Shish kebab for some people – a favourite dish. And to eat it outdoors, on a picnic in the forest or on the garden site – sacred business. However outdoor recreation can lead not to pleasure, positive emotions, and to food poisoning.

Instruction

1. Take for the strict rule: someone from participants of a feast has to cook meat for a shish kebab. It isn't necessary to buy shish kebab-semi-finished product in the market or in shop even if the seller will swear all Saints that it is absolutely fresh. You don't know who and in what conditions cut this meat as cooked marinade.

2. Surely mature the cut meat in marinade, at least several hours (and not less day is better, the shish kebab from it will only be more tasty and is more juicy). Vinegar, lemon juice or (on the fan) kefir surely has to be a part of marinade. Acidic environment is pernicious for the majority of a causative microorganisms. The good disinfecting properties also many types of spices, for example, pepper (black and red), a thyme, a turmeric have. You can add them to marinade also.

3. Cut meat before pickling by average pieces. Small pieces will quickly be fried thoroughly on all thickness and if the one who fries a shish kebab though will for a while distract from cooking, meat becomes tough and tasteless. Too large pieces badly become impregnated with marinade and are fried thoroughly, in the middle there can be sites with blood, and it is fraught with poisoning.

4. During the picnic follow rules of personal hygiene. For some reason very few people will leave at home to wash hands before the network at a table, and it outdoors is neglected. You remember a saying: "Dysentery – a disease of dirty hands"! If at the dacha there is no centralized water supply, don't rinse a hand from a barrel for watering, and especially, in the next reservoir. Bacteria there – a dime a dozen. Wipe palms with special sanitizing wipes or water on them from the container with drinking water.

5. Use disposable tableware. If you need to leave from a table, without having eaten up the portion, surely cover a plate with a cover or food wrap. Don't forget that flies fly to warm weather, and they are carriers of any infection.

6. You shouldn't take to a shish kebab a garnish in the form of the salads dressed with sour cream or mayonnaise. On a heat they quickly spoil. Take cucumbers, tomatoes and greens better.
