Find good kvass in shop it can be quite difficult. Now there is a huge amount of the drinks which only are bearing a faint resemblance to the correct, real kvass.

1. All kvass is divided into two groups now: blended and received as a result of fermentation. Certainly, it is possible to carry to the real kvass only representatives of the second group as they are "living". At good kvass there have to be yeast and sour-milk bacteria which allow drink to stay constantly in a condition of fermentation. These microorganisms also impact to kvass habitual relish, doing it useful. Surely pay attention to beverage composition, in the real kvass there have to be yeast.

2. Blended kvass doesn't ferment as it is made from in a special way the prepared kvass concentrate, with addition of citric acid, fragrances and other ingredients. Blended kvass can be made of natural products, but even in this case it is very far from "live" kvass.

3. Always pay attention to an expiration date. The it is less, the kvass is more correct. Ideally kvass shouldn't be stored longer than day therefore it is the best of all to buy it in pouring. Per day sugar manages to ferment, as a result in drink there is only acid, and kvass turns sour. Producers of bottled kvass prolong its expiration date by means of pasteurization and filtration, it has to be surely specified on the label. After such processing, kvass loses the most part of useful qualities, but it is longer stored so it can be bought for the future. But even taking into account such processing good kvass shouldn't be stored longer than two months.

4. If on the label it is specified that before you kvass drink, it is necessary to refuse purchase. Kvass drinks call sparkling water with taste of kvass. As a part of similar drinks it is possible to find huge amount of fragrances, dyes, sweeteners, acidity regulators. Quite often producers of kvass drinks use benzoate of sodium which can cause strong allergic reactions.

5. You shouldn't buy kvass with a mark "highly carbonated". It demonstrates that bubbles in drink appeared thanks to artificial introduction of carbon dioxide, but not as a result of natural fermentation. In principle, it doesn't affect taste of drink, but if you see such mark on a bottle, attentively study the label regarding fragrances and dyes. However if they are absent, such kvass can safely be bought.

6. Price of kvass shouldn't be too low, the unusual low cost of drink definitely doesn't demonstrate high quality. Good kvass is several times more expensive than various kvass drinks.
