Compotes are decoctions from the fresh, dried or frozen fruit or berries cooked in water or in in a sugar syrup. They are very tasty and useful as they keep a large amount of vitamins and useful substances.

Instruction

1. Regardless from what fruit or berries compote will be cooked, at first weld syrup. Ingredients pay off as follows: if berries or fruit sour, then sugar it is necessary to put 200 grams on 1 liter of water. If berries sweet, then there are enough also 150 grams of sugar on water liter. Bring syrup to the boil and track that sugar was completely dissolved in water.

2. After that prepare fruit or berries. At apples, pears or a quince remove sunflower seeds, wash out them and cut segments. In the beginning touch dense berries (cherry, a gooseberry, sweet cherry), then wash, destem if it is necessary, put in hot syrup and boil. Touch soft berries (raspberry, a wild strawberry), put in vases and fill in with warm syrup. These berries don't boil. Wash plums, cut them in half, remove stones and fill up in the boiling syrup.

3. If you cook dried fruits compote, then consider that they are put in a certain sequence. In the beginning also touch dried fruits, well wash up them, sort on structure and bring to the boil syrup. Then put pears in the beginning, boil them several minutes, then add apples, you cook some more minutes and at the end put prunes, dried apricots and raisin.

4. To improve taste of compote, add to it a little wine. Also the taste will be improved by crusts of a citrus (lemon or orange), only surely remove them at the end of cooking that they didn't give to compote excessive bitterness. For strengthening of taste add nuts or spices (vanilla, cinnamon) to compote.
