How to learn to cook adjika with horse-radish

The home-made adjika made from a fresh vegetables and spices will become favourite seasoning of your family. The horse-radish and garlic which are its part will support your immunity, and its pungent flavor will make familiar for a long time dishes more fragrant and more tasty.

It is required to you

  • tomatoes – 3 kg;
    • paprika – 2 kg;
    • bitter pepper – 250 grams;
    • garlic – 250 grams;
    • horse-radish root – 300 grams;
    • sugar – 150 grams;
    • salt – 100 grams;
    • vegetable oil - 200 ml;
    • table vinegar – 150 ml;
    • fresh greens – on one bunch of parsley and fennel;
    • seasoning – 1 bag of "Khmeli suneli".

Instruction

1. Begin preparation of adjika with preparation of all vegetables entering the recipe. Wash properly a baking plate flowing water a root of horse-radish and tomatoes. Carefully wash up and peel the Bulgarian and bitter pepper from fruit stems and seeds. Clean and wash out garlic. Fill in bitter pepper and garlic with cold water and set aside aside. Wash up greens and spread out to a towel that it slightly dried up.

2. Take tomatoes and accurately lower them in a pan by 4 – 5 liters, fill in with boiled water. Water has to cover tomatoes completely. In 2 minutes drain water. Clean still hot fruits from a thin skin and fruit stems. Cut tomatoes on a part and scroll via the meat grinder.

3. Miss via the meat grinder bitter and a paprika.

4. Peel a horse-radish root, cut it with pieces and overwind on the meat grinder.

5. Connect the vegetables processed via the meat grinder in 5-6 liter pan, well stir and bring to the boil. Add salt, sugar and you cook on slow fire of 40 minutes, constantly stirring slowly.

6. While adjika cooks, be engaged in sterilization of cans. Under hot flowing water soap solution very well wash up and wash out banks (ready adjika 5 – 6 liters usually turn out). For sterilization you need large diameter a pan and the same diameter a sieve. Pour water into a pan and bring it to the boil. From above cover a pan with a sieve and establish on it banks by a bottom up for 10 - 15 minutes. Put the sterilized cups a neck down on a clean towel.

7. For sterilization of cans it is possible to use also the microwave. Pour into each jar a little water (about 2 - 3 centimeters). Put in the microwave for 5 minutes at the power of 700 watts (change time of sterilization depending on the power of your microwave oven).

8. It is possible to sterilize banks and in an oven. Warm it to 160 degrees. Put wet cups before their full drying, approximately there for 3 – 4 minutes. You watch closely that they didn't burst.

9. Boil covers separately. There is enough 5 – 7 minutes.

10. While the sterilized ware cools down, small chop greens and garlic.

11. After mix of vegetables prokipet 40 minutes, add to it garlic and vegetable oil. Well mix and you cook on slow fire of 20 more minutes. Then accurately pour in vinegar and put greens, fill up Khmeli Suneli seasoning. Continue to cook 10 more minutes. Pour ready adjika on banks and roll up.
