How to make apples jam by segments

It is known that apples are the most available fruit for Russians. Therefore also there is a lot of recipes for winter of garden apples. Jam from apple segments is cooked by the simple and checked way, it turns out very fragrant and long term is stored.

Ingredients necessary for preparation of apple jam:

- 2 kg of any garden apples (proportions can be increased);

- 2 kg of granulated sugar.

We cook apples jam for the winter:

1. First of all for jam it is necessary to choose and prepare apples. They have to be rather ripe, but not overripe. It is also important that the peel wasn't damaged. About 3 kg of selected apples need to be washed out and dried (from 3 kg of apples about 2 kg of segments will turn out).

2. After apples are dry, they need to be cut on small segments. The core has to be removed together with seeds.

3. Take a wide pan from stainless steel and put a thin layer of apples on a bottom, pour sugar. Repeat layers until ingredients reach a limit.

4. Close and leave a pan for the night or for 12 hours.

5. When time passes, it is necessary to mix and pokipyatit apples with syrup on fire about 5-7 minutes. Then to switch off a plate and to leave jam before cooling.

6. When apple jam cools down, it is necessary to repeat the procedure and again to leave it to cool down.

7. The third time it is possible to boil jam slightly longer, minutes 10-15 to achieve the necessary density and saturation of taste.

8. Apple jam still we heat to spread out in sterile banks and to twirl, or to roll up them. After cooling the banks store in cold.
