The popular deputy of Russian salad salad on the Soviet table – Capital salad. In the 30th years of the XX century the chef of Moscow restaurant Ivan Ivanov "borrowed" the recipe of salad from the master – Lucian Olivier. Having replaced hazel grouses with chicken meat, crayfish tails – boiled carrots, and lettuce leaves – parsley, Ivan Mikhaylovich offered Capital salad on court to visitors of restaurant. Now Stolitchny-Olivie salad is national property.

It is required to you

  • potatoes – 6 pieces;
    • onion – 2 pieces;
    • carrots – 2-3 pieces;
    • cucumber marinated or fresh – 2 pieces;
    • apple – 1-2 pieces;
    • fowl – 200-300 grams;
    • green peas – 1 glass;
    • eggs – 3-4 pieces;
    • salt
    • pepper
    • parsley – to taste;
    • mayonnaise – ½ glasses.
    • For mayonnaise:
    • vegetable oil – 1 glass;
    • yolk – 2 pieces;
    • salt – ½ teaspoons;
    • sugar – 1 teaspoon;
    • lemon juice – 1 tablespoon;
    • mustard – 1 teaspoon.

Instruction

1. Take vegetables for Capital salad average size. Boil potatoes and carrots in a uniform. Clean and cut on small cubes.

2. Wash eggs, boil hard-boiled (10 minutes), small chop.

3. Fresh cucumbers were added to classical option of "Capital" salad. Select cucumbers on the taste and according to availability. What you would be cucumbers chose, marinated or fresh, remove from them a skin. Cut small into cubes or circles.

4. To boil fowl (chicken, a turkey, a partridge) until ready. Flay. Cut meat into small pieces. If you have not enough time, chicken can replace with "Doctor's" sausage, having cut it in small cubes.

5. Take green peas tinned or fresh-frozen. Frozen peas need to be defrozen on air and to drain water. Marinade from banks with a canned peas needs also to be merged.

9. Dress Capital salad with mayonnaise. Make mayonnaise. Mix 2 yolks, a half of a teaspoon of salt and one teaspoon of sugar. Sugar and salt have to be dissolved completely. Shaking up yolks, on 1 teaspoon, add vegetable oil. Add lemon juice and mustard, mix.

10. Mix all ingredients of salad in high-capacity. It is necessary to mix accurately, movements from below up.

11. Lay out salad the hill in a salad bowl, decorate with parsley, florets from carrots, a cucumber and boiled eggs, give on a table.
