How to make tasty adjika

Adjika - a traditional Abkhazian dish which represents hot sauce from vegetables and seasonings. Adjika is translated from the Abkhazian language as "salt". Adjika is also the Georgian dish.

Preparation of products

For preparation of adjika it is required to you: 1.5 kg of squash, 900 g of tomatoes, 250 g of carrots, 250 g of paprika, 50 g of granulated sugar, 80 ml of a table vinegar, 100 ml of sunflower oil, 1 tablespoon of chili powder, 2 heads of garlic, 1 tablespoon of salt.

Preparation

Prepare vegetables for preparation of adjika. Wash them and dry. Peel carrots and squash, cut pepper on halves and remove from them sunflower seeds. Overwind all vegetables via the meat grinder or crush in the food processor, lay out in a big pan. Further add necessary amount of sunflower oil, granulated sugar and salt to weight, carefully mix ingredients.

Put a pan on a plate, include slow fire. You cook adjika within 45 minutes. Add vinegar, the crushed garlic and chili powder to weight, you cook 10 more minutes. 

Shift adjika in the sterilized dry banks, roll up boiled covers. Turn banks with adjika and put on a cover, from above cover with a cover or a warm towel, leave before full cooling. 

Tasty home-made adjika is ready! You can serve it as sauce to garnishes and main courses.
