  • - 250 g of sugar;
  • - 75 ml of water;
  • - 75 g of strawberry puree;
  • - 38 g of corn glucose;
  • - 11 g of gelatin;
  • - 3 proteins;
  • - 2 tablespoons of lemon juice;
  • - 1.5 tablespoons of flower or orange water (it is possible to do without it);
  • - 1 tablespoon of icing sugar + 1 tablespoon of starch.

Instruction

1. Wet the specified amount of gelatin in cold water. Wash out fresh strawberry (it is possible to take frozen, but previously defreeze it), wipe through a sieve or crush in the blender, all 75 g of puree from strawberry have to turn out.

2. In a stewpan mix sugar with glucose and water, mix and you cook on average fire. As soon as sweet syrup reaches temperature of 116-118 degrees, remove it from fire. If you have no thermometer, then cook syrup by a method of a soft ball: drip a syrup drop on a saucer, slightly cool and try to stick together from it a ball.

3. Separately beat egg whites with a sugar pinch before formation of magnificent foam. Beating whites, enter a thin stream hot syrup. Shake up the mixer to smooth and steady peaks. Wring out gelatin from water, add to weight, mix.

4. Enter into egg and gelatinous weight in three steps strawberry puree, lemon juice and flower water, carefully mix a scapula. Pour out in a form, put for 10-12 hours in a dry cold spot.

5. Strew a surface cooled delicacy with icing sugar with starch, pull out a fruit candy from a form, cut into cubes 3х3 centimeters. Knife a fruit candy dry heated. Roll in strawberry cubes in mix of starch and sugar and give on a table as a dessert.
