One of favourite traditions of Russians – to salt cucumbers for the winter in banks with vinegar, citric acid, aspirin and other methods. Crunchy cucumbers become excellent on taste and very useful snack which is loved by children and adults.
How to salt cucumbers for the winter in banks with vinegar
Most often skilled hostesses recommend to salt cucumbers for the winter in banks with vinegar as from it vegetables become especially tasty and crunchy. At the same time this way of preparation is rather easy. On one 3-liter can it is required to you:
- 1-2 kg of fresh cucumbers;
- 3 tablespoons of 9 percent vinegar;
- 5-7 peas of a black pepper;
- 1-2 bay leaves;
- 3-5 garlic gloves;
- 3 tablespoons of salt;
- 3 tablespoons of sugar (at will);
- 1-3 branches of fennel;
- leaves of cherry or blackcurrant;
- 2-3 leaves of horse-radish.
Carefully wash banks and boil covers. Wet cucumbers in cold water for 3-5 hours and well wash out. Put greens, garlic and spices on a bottom of cans, densely lay from above cucumbers. Boil the kettle and fill in banks with boiled water to top. Cover and give to infuse several minutes.
Drain water in a pan. Add to it salt and sugar, then you boil within 10 minutes. Again fill in cucumbers with boiled water from a pan. Add vinegar and roll up a cover, having checked its tightness (otherwise not to avoid an unpleasant deposit and the spoiled taste). Turn banks upside down and put to cool down, having well wrapped up.
How to salt cucumbers for the winter in banks with citric acid
You can also salt cucumbers for the winter in banks with citric acid or aspirin. This way of preparation will please those who like cucumbers, softer, fragrant and not spicy on taste. The following ingredients will be necessary for you:
- 2 kg of fresh cucumbers;
- spoon of citric acid or 2 sparkling tablets of aspirin;
- 3-4 garlic gloves;
- fennel umbrella;
- leaf of horse-radish;
- half of green pepper
- 3 tablespoons of salt;
- 5 tablespoons of sugar;
- 6-7 peas of a black pepper
Wash out cucumbers and wet at several o'clock in cold water. Clean and cut carrots, garlic and place in sterilized to bank. Add fennel, horse-radish and pepper – these spices will make snack fragrant and toothsome. Densely lay cucumbers in bank so that from below there were larger, and from above – it is less, fill in them with the boiling water and leave for half an hour.
Drain water in a pan, fill granulated sugar and salt then again boil. Fill with the received marinade to bank with cucumbers. Add citric acid or aspirin and at once twirl a metal cover. Turn, wrap up with a blanket and leave before full cooling. It is the best of all to store cucumbers in banks in the cool place.
