Ingredients: - a chokeberry – 1 kg; - sugar – 1.5 kg. A chokeberry – rather firm berry. Therefore for deeper impregnation of berries its syrup it is necessary to freeze at first. For this purpose place the washed-out chernoplodka for 3-4 hours in the freezer. When freezing the water which is contained in cages of berries will turn into ice crystals which sharp sides will break off gentle cellular walls. Through the numerous microcracks which are formed at the same time syrup in berries will also get at jam making. Shift the frozen chernoplodka in the prepared ware (pan, a basin), fill in with hot syrup, bring to the boil and you cook on average fire of 12-15 minutes. Then switch off a plate, cover ware with jam or a towel and leave for 6-8 hours. After that still boil a rowan of 10-15 minutes, shift in the sterilized banks, close covers. When jam cools down, remove it to the dark cool place.

Tincture from a chernoplodka

Ingredients: - a chokeberry – 200 g; - a cherry leaf – 100 pieces; - sugar – 2 glasses; - vodka – 700 ml; - water of 1.5 l. Fill in berries of a rowan and leaves of cherry with water, put on fire and you cook after boiling of 15-20 minutes. Filter broth, pour sugar, pour in vodka and stir to full sugar remelting. Pour on bottles, close dense covers and remove on cold. In a month you can get on a holiday table.

Hot spice from a chernoplodka

Ingredients: - a chokeberry – 0.5 kg; - garlic – 1 head; - salt – 2 tsps; - sugar – 2 tablespoons; - a table vinegar of 9% - 1 tablespoon; - a black sprinkling pepper and red, a basil, a coriander, cinnamon to taste. Peel garlic, wash out a rowan and miss together with garlic via the meat grinder or crush the blender. Add salt and sugar, vinegar, spices and spicery to taste. Properly mix everything, shift in a clean can and remove in the fridge. Hot spice to meat and fish dishes, to dumplings, manti is served.
