The salad called Harbin is widespread in all Province of Heylundzyan in China. Harbin is the central city of this province. Salad is simple in preparation, and therefore it can easily be made independently.

Habrinsky salad can't be made without two main components: cellophane noodles and soy-bean sauce. Cellophane noodles - glass noodles from starch. The noodles made from corn starch are considered low-quality and are unsuitable in food.

The soy-bean sauce is also very important at preparation of this dish. In salad it is used as gas station. It should be noted that quality sauce is made of soy beans with addition of seeds of wheat. Often ready sauce also contains salt. It is better to give preference to a product without addition of sugar and flavor additives.

Other important component are wood mushrooms. They are also known in China under the name му Ayr. On sale they meet in the pressed dried look. In the recipe it is possible to use any other dried mushrooms. Tofu – the product prepared from soybeans. Sheet tofu can be met, perhaps, only in China. It can be replaced with a soy asparagus. One more option for replacement is to roast omelet from one egg, to cool it, to roll and to cut thinly. For salad for 4 portions it will be required: - cellophane noodles (glass noodles) - 500 g; - mushrooms wood (dried) – 150 g; - sheet tofu (or a soy asparagus) - 200 g; - egg - 1 piece; - a cucumber – 2 pieces; - carrots - 1 piece; - a white cabbage – 300 g; - chicken breast – 300 g; - a soy-bean sauce – 2-3 tablespoons; - sesame oil – 2 tablespoons; - a red capsicum – 1 piece; - sesame sunflower seeds – 1 tablespoon (for ornament); - a refiner syrup – 1 teaspoon; - lemon juice - 0.5 teaspoons.

Way of preparation

Fill in mushrooms with a glass of boiled water. In 5 minutes they will inflate and will increase in volume. Bring in a big pan water to the boil. Lower there noodles. Depending on quantity of portions - a half or the whole packing. In five minutes water to drain, add the soy-bean sauce and sesame oil. Further small to cut vegetables: one big or two average cucumbers to chop a half of a small head of cabbage. Instead of usual white it is possible to use the Beijing. Add one tablespoon of a soy-bean sauce to a frying pan. Lay out meat or chicken over mix from vegetables, noodles and tofu. Decorate a ready-to-serve salad with sesame sunflower seeds.
