Some vegetables can be eaten without problems crude. Other vegetables have too strong texture, a peculiar flavor, some even contain toxins. They need to be subjected to thermal treatment. Improve taste of vegetables, their texture and at the same time to keep all vitamins, is the purpose of preparation of vegetables.

The kitchen of vegetables is the whole world, traveling around which, you learn to impact to each vegetable a peculiar relish depending on a way of preparation.

  • Traditional way of preparation of vegetables is suppression. It is used when cook, for example, ""ratatouille"" or ""stewed potatoes with meat"". It is an ideal way of maintaining taste and vitamins. Don't forget what can be extinguished not only in water, but also in milk, and in broth. It is possible to use the pressure cooker to prepare quicker.
  • The steamed vegetables have special taste. They will disclose all the taste and aroma if it is correct to prepare them. It is desirable to use the double boiler to determine the exact time of cooking. To perfectly steam vegetables that they had slightly dense texture, is a true art.
  • Cooking of vegetables in water, is the usual way used for preparation of puree from potatoes, carrots, or a parsnip. It is possible to add a little oil to water and sugar.
  • If you are ready not to leave a cooking zone, then you can try to make vegetables on a grill. In a barbecue, in an electrogrill or in a special frying pan with a wavy covering you will roast vegetables, carefully watching that they didn't dry up or didn't burn down.
  • There is also very fast way of preparation of some vegetables allowing to keep their texture and taste, and in certain cases even to give brightness. It is a blanshirovka. Vegetables at first need to be held within 5 - 30 seconds in boiled water, and then to lower in ice water. This method is used, for example, for preparation of haricot which becomes bright green and crunchy. 
  • Vegetables can be fried in a frying pan with use of creamy or vegetable oil, animal fat. On vegetables the thin crust impacting them special relish is formed.
  • Bake vegetables in an oven, is my favourite way of their preparation. For some vegetables I use a foil, for some - a culinary roasting sleeve. It is possible just to bake them on a baking sheet as I do it with pumpkin.
