How to bake beef in a Provencal way

This dish came to us from Provence (area in the southeast of France). The kitchen of this region differs from classical French cuisine in the simplicity and is very similar to house. A basis Provencal dishes are vegetables, olives, wine and a fresh meat. Meat is pickled at first, and then extinguished or baked with addition of Provence herbs. Beef in a Provencal way turns out gentle, juicy, fragrant.

It is required to you

  • - 800 g of beef;
  • - 100-120 g of salted pork fat;
  • - 50 g of olive oil;
  • - juice and dried peel of a half of orange;
  • - 2 carrots;
  • - 2 bulbs;
  • - 3 garlic gloves;
  • - 2 teaspoons of Provence herbs;
  • - 3 bay leaves;
  • - carnation pinch;
  • - 0.5 banks of olives;
  • - 400 ml of red wine;
  • - 0.5 glasses of wine vinegar;
  • - 150 g of broth or water;
  • - olive oil, a desi for frying;
  • - salt, pepper to taste;
  • - half of a bunch of parsley.

Instruction

1. Peel onions and carrots and wash. Cut onions half rings, carrots circles, small chop parsley.

2. Fill in the crushed vegetables with wine, add vinegar and spices. Put marinade on average fire, bring to the boil and cool.

3. Small chop garlic a knife. Wash meat, cut on pieces of the average size, roll in in the crushed garlic, leave for 20 minutes.

4. Fill in beef with marinade and leave for pickling for 12 hours in the cool place.
