Instruction

1. The recipe of classical buns with cottage cheese assumes use of yeast dough. Warm up in a deep bowl a glass of milk to room temperature and add to it a tablespoon of granulated sugar and 5 g of a yeast baking powder. Put 150 g of flour in a sponge dough and put to the warm place for 15 minutes. During this time the sponge dough has to rise well.

2. Add to a sponge dough 500 g of the sifted wheat flour, 50 g of the softened desi, a pinch of salt and a tablespoon of sugar. Carefully mix dough and again put it to rise to the warm place deprived of drafts. As soon as dough rises, press down it. Dough can rise 2-3 times.

3. While dough approaches, be engaged in preparation of a stuffing. Mix 300-500 g of shabby cottage cheese with 2 chicken yolks, 1/2 glasses of sugar, 2 spoons of sour cream and 40 g of the softened desi. The stuffing has to turn out rather firm texture. If it looks liquid, it is possible to add to it a little potato starch or wheat flour. Quite often buns with cottage cheese bake, using the ready sweet cottage cheese bought in shop instead of a house stuffing.

4. Condense the risen dough with hands a little and divide into pieces, the size approximately about egg. Roll each piece in balls. Place preparations from the test on a cutting board, the sprinkled flour. Now it is necessary to wait until dough rises.

5. Dip a bottom of a glass in flour and squeeze out them a pole in a test ball. The basis with a diameter up to 10 cm with deepening in the central part has to turn out. Properly shake up egg and grease with it a bottom of each preparation. Shift the prepared flat cakes to the baking tray covered with the parchment paper greased with a desi. Fill deepenings of flat cakes with curds.

6. Bake buns in the oven which is warmed up up to 200 wasps within 30 minutes. That buns turned out magnificent, put the container with water on an oven bottom. It will protect pastries from drying. Ready buns can be strewed with a ground cinnamon, icing sugar or to dunk into glaze.
