How to make exotic jam

Cherry or raspberry jam was tasted, probably, by everyone. And what if to surprise the family with unusual exotic fruit, nuts, flowers jam, cones and even vegetables?

Linden flowers jam

It is required: 1 kg of flowers of a linden, 2 glasses of water, 2-3 g of citric acid, 1 kg of sugar.

Florets of a linden should be collected in warm weather, to cut off fruit stems, to remove leaflets. It is good to wash out in a colander. Pour in water in a pan, pour sugar and boil, stirring slowly, 7-8 minutes to sugar remelting. Add flowers, cover them with a plate and press cargo. When florets completely become covered with syrup, the pan should be put on fire again. Cook jam of 35 minutes, at the end to add citric acid and we heat to pour on banks, close covers.

Nut jam

Ingredients: 1 kg of green (unripe) walnuts, 1 glass of water, 2 kg of sugar.

Peel nuts. It is the best of all to do it in gloves to avoid a burn. Fill up nuts with sugar and leave for day in the warm place. Then to cook in 4 receptions until thick, allowing to cool down after each cooking of mix. We heat to pour in banks and to close.

Jam from a fig

It is required: 1 kg of a fig, 100 g of walnuts, 1.3 kg of sugar, 2 g of citric acid, is a little vanillin, water.

Preparation: Wash a fig with cold water, cut off fruit stems. Divide walnuts into segments. On small fire to blanch a fig of 5-6 minutes. Prepare syrup from a half of sugar and 2 glasses of water. To fill in a fig with nuts with syrup and to sustain 3-4 hours. Cook in 2 receptions. After the first cooking to add syrup from the remained sugar and 1 glass of water. Before the end of the second cooking to add citric acid and slightly vanillin. Spread out hot jam on banks.

Jam from pine cones

Ingredients: 1 kg of the young pine cones (collected till June 20), a sugar syrup (2 kg of sugar on 1 l of water).

Fill in cones in a pan with cold water to a full covering, put on fire and boil 20 minutes to softness. Cones shouldn't boil soft. Take out them from water and put in in advance prepared syrup. Boil 20-30 more minutes and pack in banks.

Carrot jam

It is required: 1 kg of young carrots, 2-3 g of citric acid, 1 kg of sugar, vanilla sugar, water.

Carrots wash out, cut off a tops of vegetable and for 5 minutes to lower in the boiling water. Then to cool it, to clean and cut circles. From 1 l of water and a half of sugar to prepare syrup. Lay out carrots in a pan and fill in with syrup. Leave for 5 hours. Then to bring to the boil, to cook 5 minutes. Remove from fire and allow to have a rest 10 hours. Pour the remained sugar and, stirring slowly to cook carrots until ready. Several minutes prior to the end of cooking to add slightly vanilla sugar and citric acid. Pour on clean banks.
