Instruction

1. Yolk mayonnaise with mustard. Put two yolks and 1 h a spoon of mustard powder in a deep bowl. Add the garlic glove which is pressed through via the spadefoot, salt and pepper mix. Make vegetable oil. Pour oil in such capacity that it was convenient to be added on drops or very thin stream. It is the best of all if you have a small jug for oil. Wet a terry towel and put on it a deep bowl in which you will shake up mayonnaise. Your both hands will be occupied, make so that the bowl didn't slide on a table.

2. Take in one hand the mixer or a nimbus, in the second hand a small jug with oil. Pour oil on drops, constantly shaking up mix. Do it carefully, after each addition of oil. When weight begins to get denser, add 1 tablespoon of white wine vinegar or ½ tablespoons of usual vinegar. Continue to shake up.

3. At the end of process it is possible to add couple of drops of fragrant oil. Pour in odorous sunflower or sesame oil. Then your ready sauce will smell of sunflower seeds. Or add a little olive oil, for the legend of specific aroma. Pour in oil until your mayonnaise gains desirable density. Mayonnaise is ready for use. Shift the remains of mayonnaise in a jar with a cover and you store in the fridge no more than 5 days.

4. Mayonnaise without mustard. Put in a bowl for the mixer two eggs (yolks + proteins), salt, add a black sprinkling pepper, ½ h a spoon of granulated sugar. Begin to shake up. A thin stream you enter vegetable oil. Add vinegar to the thickened mayonnaise to taste, for giving to mayonnaise of sharpness and sourness. Vinegar can be replaced with lemon juice. If color of mayonnaise isn't basic, then add 1 tablespoon of balsam vinegar.
