How to make tasty beef tongue

Among an offal the language stands alone – dishes from it are considered as a delicacy. But there are people who not too love it, considering that the boiled tongue has a little "rubber" consistence. To dissuade such fastidious persons, language should be prepared correctly.

It is required to you

  • neat's tongue;
    • carrots of 1 piece;
    • onions of 1 piece;
    • root of parsley of 1 piece;
    • root of a celery of 1 piece;
    • salt;
    • black pepper;
    • coriander;
    • caraway seeds;
    • ginger;
    • bay leaf.

Instruction

1. Rinse language with cold flowing water and put in a pan. Don't spend time for carefully washing of a delicacy. Take a pan low and wide. Language has to lie in it, adjoining to walls.

2. Boil water in a teapot. Fill in language with abrupt boiled water. Protein on a surface will at once grab, and language will be very juicy. Again fill a teapot with water and put to be boiled.

3. Put on fire a pan with language. As soon as water begins to boil, at once merge it. Together with this water all harmful extracts and the dirt which was on an uneven skin of language will be removed from a dish. Again fill in with abrupt boiled water and put on fire.

4. Lower fire under a pan to a minimum. Now it is possible to put vegetables: the cleaned bulb, carrots, a root of a celery and parsley. Close ware a cover and you cook two hours on very weak fire. All this time water has to boil almost imperceptibly.

5. In two hours put in a pan of spice and salt. Broth has to be spicy and well salty. You cook an hour more on very weak fire.

6. A culinary fork pin language. If readiness degree suitable, it easily is thrust. Don't switch off a plate. Under cold flowing water cool language within two-three minutes.

7. The skin from the cooled language is removed easily. Remove it, cutting with a knife in difficult places. Then put it back in a pan. Increase fire that broth quickly began to boil. After that completely switch off a ring and leave ready language in broth for 15 minutes.

8. The delicacy can be cut across fibers and to give on a table in a cold or hot look as snack or an independent dish. It is possible to make aspic from language or, having small cut, to use it in salads.
