Pearl barley, pumpkin and bilberry salad

This salad – a find for those who love original dishes with unusual ingredients. Those who adhere to a healthy lifestyle as at salad there are most useful products also will be enraptured with it.

It is required to you

  • Ingredients on 6-8 persons:
  • - 300 g of pearl barley;
  • - muscat pumpkin of the average size;
  • - 2 spoons of olive oil;
  • - 300 g of broccoli;
  • - 75 g of pine nuts;
  • - 100 g of bilberry.
  • For gas station:
  • - 150 ml of olive oil;
  • - 50 ml of raspberry vinegar;
  • - tablespoon of liquid honey;
  • - salt and pepper.

Instruction

1. We boil pearl barley according to the instruction on packing until ready, we throw back on a colander, we remove aside.

2. We warm an oven up to 180C. We cut pumpkin segments 1 centimeter thick, we salt, we pepper, we sprinkle olive oil and we spread on a baking tray. We bake 30-35 minutes, we remove aside. We spread pine nuts on a baking tray, we bake in an oven 2 minutes, we mix and we send to an oven for 5 minutes.

3. While pumpkin is baked, we sort broccoli on small pieces (on one sting), we prepare for couple 5-7 minutes.

4. For gas station we mix in a bowl olive oil, raspberry vinegar, honey and on a pinch of pepper and salt.

5. In a big bowl we mix all cooled-down ingredients, we add bilberry, we pour dressing, carefully we mix and we give on a table.
