Marshmallows are sweeties like souffle or marshmallows. It is considered one of favourite delicacies of Americans, but also in Russia becomes more and more popular. If desired it is simple to marshmallow to prepare in house conditions – it turns out even more tasty and more gentle, than brought from shop.

Prepare 400 grams of sugar, a glass of water, 25 g of gelatin, it is a little salt, 0.5 glasses of starch, as much icing sugar, vegetable oil – choose as flavourless. For aroma it is possible to use vanilla sugar – 10 g. Also the invert or corn syrup is required – it can be bought in shop or to prepare.

If you are going to prepare syrup independently, begin with it. In a pan with a thick bottom to mix 50 ml of water, 120 g of sugar, a tablespoon of lemon juice. Put mix on fire and bring to the boil at constant stirring. Reduce fire, you uvarit syrup to a condition of liquid honey, then cool.

Mix 100 ml of cold water with gelatin, put aside – let will bulk up. In half an hour warm up that gelatin could be dissolved completely.

Now in one pan connect sugar, syrup, salt and the remained water. Put on fire and boil, continuously stirring slowly. Then you cook syrup on slow fire of 8-10 minutes. Pour the dismissed gelatin in a deep bowl and pour in hot syrup there. Shake up mix by means of the mixer at a small speed. Mix has to increase in volume and to become magnificent, viscous, white color. Add vanilla essence there, mix once again and cool everything.

Cover a baking dish with baking paper, oil. Lay the turned-out weight in a form and level a scapula. Cover from above with a film or a food foil and put in the fridge at least for 6 hours. It is possible to leave also at the room temperature.

Make mix for a boning of the received sweeties – for this purpose mix icing sugar with starch and sift through a sieve. The marshmallow can be cut on pieces of any look or to use ready forms for candies or cookies then to roll in them in powder.

When cooking it is possible to add to mix for production of a marshmallow food colors, cocoa, chocolate, fragrances or syrups with different tastes.
