One of popular cherry brandies of the world is called the Maraschino. Its name is directly connected with a grade of cherry which in the people nicknamed maraskinovy.

Cherry which became a basis of one of the liqueurs, most popular in the world, grows in Croatia. For many years this country had the preferential right to Maraksino's production.

Now such cherry began to be cultivated also in other countries, for example, in Slovenia. On the external characteristics it differs from the same sweet cherry in more tart gustatory qualities and the small size. Such grade is in great demand in the market of alcoholic beverages as by means of bright saturated taste of cherry it is possible to make a set of cocktails, liqueurs and other alcoholic drinks.

In this surprising grade of cherry - maraskinovy - stones are absent.

These wonderful berries not only overwork for drinks, but also put directly in a glass with cocktail. With such filling drink becomes tart, and at the end this cherry it is possible just to eat and not to be afraid that choke with a stone.

Cherry brandy of the Maraschino

Surprisingly, but unlike cherry which went for production, liqueur looks absolutely transparent. On a smell it reminds aroma of a bitter almond with cherry notes a maraschino. In the course of production of cherry brandy use a distillation method which includes liquid evaporation, then cooling then dispersion takes place a way of vapor condensation. Such process allows to receive fragrant alcoholic drink. For preparation of liqueur of the Maraschino cherry is crushed to a condition of homogeneous mass which is placed in specially prepared barrels made mainly of the Finnish ash-tree. There within two or three years liqueur infuses to receive the saturated taste and almond and cherry aroma, after it filter and spill on bottles.

Consumption of liqueur

Such drink has a set of applications. It, of course, can be used and in pure form, but so, it is very often added to cocktails and coffee, and water with such drink desserts in the form of ice cream or cakes.

The soaked cherries more often can be met today not in cocktails, and on confectionery.

Process of preparation of cherries of a maraschino, for example for cocktails, happens step by step. At first cherry is soaked for a month in special chemical solution which contains quicklime and dioxide of sulfur, of course, in small percentage. After such soaking of berry become absolutely white, then again soak them in water to save berries from harmful chemicals. Then by means of sodium bisulphite they are given a fine texture and to return to berries brightly red shade them paint food colors. Their soaking in a sugar syrup with addition of almonds for this reason liqueur and has such mixed smell will be a final stage.
