Broccoli cabbage – very tasty and useful vegetable. There is a set of dishes in which this green "flower" is used: salads, ragout, casseroles. It is possible to use broccoli and independently – as a garnish to a main course.

Instruction

1. Time for preparation of broccoli in a frying pan varies from 5 to 20 minutes, depending on that how large vegetables you use and whether they were exposed to heat treatment before.

2. If you prepare fresh, young cabbage of broccoli, try to keep its useful structure, allowing the minimum time for fried vegetables. For a start well wash out broccoli and divide a bush into inflorescences. You can prepare the whole inflorescences or cut cabbage into small pieces. The fluffy top of broccoli can be eaten until green florets began to blossom. If the plant begins to blossom, cut off "bouquets", keeping only legs of inflorescences.

3. Warm a frying pan, pour on it a little vegetable oil. Lay out on a broccoli frying pan. You can make vegetable stew, having added favourite vegetables to broccoli. For this purpose fill in products with water half, cover. In 5 minutes of boiling salt, add pepper, a curry, ginger, a lemon dried peel, nutmeg to taste. You stew vegetables on average fire within 20 minutes, periodically stirring slowly. When water boils away, uncover, add small cut greens of fennel, parsley, a basil, well mix and warm up still a couple of minutes. The meal will be ready-to-eat when vegetables (including broccoli) become soft and toothsome.

4. Young broccolis can be fried separately, at the same time bringing them to semi-readiness. Prepare cabbage in the heated frying pan with vegetable oil, having flavored it with favourite spices. Preparation time depends on thickness of an inflorescence and a leg. It will be possible to define readiness of vegetables when they are easily chewed, but will keep a light pleasant crunch. So broccoli will keep more useful substances.

5. If you cut off broccoli more than a week ago, in them there will be no refined taste of fresh vegetable such obvious. You can reduce frying time if previously cook broccoli to semi-readiness. Place cabbage in the boiling added some salt water for 5 minutes. Consider that for full cooking of broccoli 7-10 minutes there are enough. When cabbage a little softens, fry it on vegetable oil, having added favourite spices. In this case it is necessary to fry broccoli only 3-5 minutes.

6. If you want to make the frozen broccolis, spread them on a frying pan from the fridge at once, without defreezing. From the frozen vegetables it is the best of all to make vegetable stew, at the same time don't add water on a frying pan: it will appear from the thawed ice. And here spices in this case will be obligatory.
