Candied fruits are known since ancient times and always enjoyed special popularity in the east. To Russia and Europe they were delivered by merchants, and long time candied fruits were considered as exotic delicacy. It is possible to buy various candied fruits and in shop, but if to prepare them independently, then it is possible to save itself from any harmful dyes and preservatives and to surprise the guests with the real sweet delicacy. It is the simplest to prepare candied fruits from an orange-peel.

It is required to you

  • 300 g of the prepared orange-peels; - 700 g of granulated sugar;
    • 250 ml of water.

Instruction

1. Choose several large oranges for preparation of candied fruits. It is desirable if they have a thick peel. Clean them and cut a peel on strips no more than 1 cm wide. If width is more, then the dried peel will absorb in itself a sugar syrup unevenly.

2. Soak the received pieces of a peel in a clear water within three days. Change water two times a day. It becomes for removal of the bitterness peculiar to an orange dried peel.

3. 3 days later place a peel in a colander and let's flow down to residues of water within 1-2 hours. From sugar and water prepare syrup. Fill in with the boiling syrup a peel and let's stand before full cooling of syrup. Then put ware with an orange peel in syrup on slow fire, bring to the boil and again let's infuse within 10-12 hours. Repeat this procedure not less than three times.

4. Cast away a ready orange peel on a sieve or a colander and let's flow down to surplus of syrup. Dry a peel. It can be done by means of an oven at the minimum temperature. Or just spread out peel pieces on a tray or a cutting board and dry indoors. The first way will reduce preparation time of candied fruits. If to dry in the second way, then time will leave more, but candied fruits will be dried evenly. Sprinkle the dried candied fruits with icing sugar and place for storage in a plastic container or a glass jar.
