How to salt cucumbers for the winter cold-process

The cold salt method of fresh cucumbers is very popular thanks to the fact that it significantly saves time, the brine doesn't need to be boiled. Also the cucumbers salted according to this recipe differ in a beautiful shade, great taste and that is important, very appetizingly crackle.

The ingredients necessary for salting cucumbers cold-process (on bank of 3 l):

- from 1.5 to 2 kg of cucumbers;

- about 1.5 pure liters (it is the best of all from a well);

- 1.5 tablespoons of coarse salt;

- on 6-7 leaves of cherry and currant;

- small fresh leaf of horse-radish (at will);

- 2 large garlic gloves;

- 2-3 umbrellas with green seeds of fennel.

We salt cucumbers for the winter cold-process:

1. The medium-sized vegetables having not too firm peel best of all will be suitable for such way of salting cucumbers. The chosen cucumbers need to be washed up and wetted for 5 hours. Just collected cucumbers don't need to be presoaked.

2. Banks for preparation of such cucumbers have to undergo sterilization surely. Then on a bottom it is necessary to lay out banks on 3-4 leaves of currant and cherry, the cut leaf of horse-radish, the peeled garlic glove. Also to add on 1 dill umbrella.

3. Further it is necessary to lay densely cucumbers in bank, and from above to close them the remained greens.

4. Salt needs to be dissolved well in water of room temperature and to fill in with solution banks with cucumbers.

Important! On each can the different amount of salt solution can be necessary. The main thing to follow the rule - on 1 liter of liquid 1 tablespoon of salt is necessary.

5. Then banks need to be closed new plastic covers which before it to rinse in hot water. Old covers are often deformed and have defects which can affect quality of cucumbers and complicate their storage.

6. Banks with cucumbers need to be removed to the cool place approximately for a month at once. After this term the cucumbers will well be salted and will be ready-to-serve.
