Until recently we were sure – mushrooms are not only very tasty product, but also full replacement to meat by amount of proteins. However in recent years voices of the doctors and nutritionists claiming that mushrooms are more likely vegetables sound more and more loudly and therefore they can't be carried to sources of protein well in any way.

Actually there is a lot of protein in mushrooms, but also, this protein on structure and structure is close to animal protein. It contains amino acids, minerals, phosphorus, iron, potassium and also vitamins.

Different mushrooms protein content miscellaneous. It depends on a grade of mushrooms, the place in which they grew of age, even on how mushrooms were prepared. For example, very young fungi not only are more tasty, but also contain more protein. And if you want to consume as much as possible mushroom protein, eat hats, but not legs.

And yet whether it is possible to consider mushrooms the full-fledged source of protein capable to replace meat? As we already spoke, protein content in different types of mushrooms variously. Leaders in this list – champignons. They contain 4.3 grams of protein on 100 grams of a product. On the second place cepes: 3.7 proteins. On the third - aspen mushrooms: 3.3. And here all favourite chanterelles in outsiders: 100 grams of these mushrooms contain only 1.6 grams of protein.

And what with carbohydrates? Not accidentally there were doubts to what class of products to carry mushrooms. We will begin with "proteinaceous" leaders. Champignons contain 1 gram of carbohydrates on 100 grams of mushrooms. Well, practically, meat. White – 3.4 grams, aspen mushrooms – 3.7. "Closing" - chanterelles – 2.2 grams on 100.

We compare and can draw the following conclusions: champignons are quite capable to replace meat, and here other mushrooms aren't. In white and aspen mushrooms the content of proteins and carbohydrates is almost identical: 3.7/3.4 in white and 3.3/3.7 in aspen mushrooms. It, so to speak, garnished meat. Actually, it is possible to refer to this category also chanterelles, only here it is more garnish.

In total we considered 1 species of the most popular mushrooms: cepes, champignons, chanterelles, birch mushrooms, russulas, saffron milk caps, slippery jacks, honey agarics, milk mushrooms, aspen mushrooms, oyster mushrooms. And only in champignons the serious prevalence of proteins over carbohydrates is observed. Or the amount of proteins and carbohydrates is approximately equal in other cases, or some of components prevails, but is insignificant.

So if you want to replace meat with mushrooms – eat champignons. In other cases don't forget: mushrooms are both meat, and a garnish, so, it is worth thinking well before adding to them some fried potatoes or paste. And if it is serious, then it is unambiguously impossible to refer mushrooms to category "proteins" or "carbohydrates". Therefore if for you calculate nutrition value of a product, check it separately for each species of mushrooms.
