The recipe is rather simple in preparation, however you need to stock up with patience as the dish demands considerable time expenditure.

It is required to you

  • – carcass of a domesticated duck (1 piece);
  • – ginger root (20 g);
  • – fresh oranges (2 pieces);
  • – lemon (1 piece);
  • – honey (8 g);
  • – salt and pepper to taste;
  • – marjoram pinch.

Instruction

1. At first it is necessary to prepare sauce in which meat of a duck will be pickled. For this purpose take deep capacity, take a root of ginger and clean from the top peel. Grate ginger with small openings. As a result at you ginger weight has to turn out.

2. Further take orange, wash out and cut on two half then squeeze out clean hands juice in the capacity where ginger lies. Also wash out a lemon and squeeze out juice in the same bowl. Then add the lemon zest grated on a small grater to the turned-out sauce. The last stage of preparation of sauce – addition of liquid honey. As a result carefully mix all ingredients.

3. The carcass of a duck needs to be washed well with cool water outside and from within. Make mix of salt, pepper and a marjoram, and then carefully rub with mix all duck. Take orange and honey sauce and miss the mark a bird from all directions, without forgetting about an inner surface. By means of a culinary foil inwrap a duck and place in the fridge for 24-28 hours.

4. Next day develop a duck, lay out from above on meat the cut orange segments, again inwrap in a foil and put on a baking tray. Cook a dish within 1-1.5 hours.

5. Further open an oven, remove the top layer of a foil and continue to cook meat 2 more hours at a temperature not less than 210 degrees. Don't forget to water periodically a duck with the formed juice which will mix up with marinade.
