How to prepare a herring in wine marinade

It is required to you

  • - 4 herrings, are desirable large;
  • - 2 bulbs of red color;
  • - 2 usual bulbs;
  • - half of a small bunch of fennel;
  • - 100 milliliters of any white dry wine;
  • - 3 tablespoons of wine vinegar;
  • - 1 tablespoon of granulated sugar;
  • - 3 buds of a carnation;
  • - 2 pieces of laurel leaves;
  • - five peas of a black pepper and salt.


1. Clean herring, then well wash out it. Red onions are cleaned, washed, then cut rings. Fennel is washed out in flowing water and small sliced.

2. Fillets of a herring accurately separate from bones and turn in it in rolls which densely to each other stack in a deep dish.

3. The white onions are cleaned, washed in water and cut bulbs on four parts. Slightly sprinkle them vinegar.

4. The glass of water is poured out in a pan and brought to the boil, put in it bay leaf, white onions, bell pepper and buds of a carnation. Boil mix, having covered on very weak fire within fifteen minutes. Then add white wine and five more minutes continue boiling.

5. The turned-out marinade is cooled, add the remained vinegar and accurately filtered. Fill in with it rolls from a herring and put for nine hours to the cool place.

6. When the dish is ready, spread a herring on a serving plate and cut portion pieces. From above decorate with rings of red onions and greens.
