How to prepare хе from a pike

In classical Korean cuisine the dish хе (hva) is the fish or meat marinated with addition of vinegar and burning seasonings which aren't exposed to heat treatment. Fish хе cooks prefer to prepare from a predatory fish species – for example, a pike perch or a taimen. In house conditions it is possible to use also more widespread predator of the Russian rivers – a pike. Your relatives won't remain indifferent to the juicy and fragrant pike pulp which is plentifully seasoned with spices. It is only important to know some secrets and subtleties of preparation of products.

It is required to you

  • pike of the average size (2-2.5 kg);
    • 4 tablespoons of a table vinegar of 70%;
    • 3 large bulbs;
    • 1 average carrots;
    • 1-2 garlic gloves;
    • 100 гр. vegetable oil;
    • 1 fresh cucumber;
    • salt
    • chili powder
    • coriander;
    • seasoning to fish (to taste).

Instruction

1. Wash up fish. Cut a paunch and remove an entrails. Again wash a baking plate with flowing water, dry. Cut off fins. Put a carcass sideways. A sharp knife make a deep cut on all length of the ridge. Accurately cut off fillet along edges. Repeat the same on other party of a carcass. From the remained skeletons and the head it is possible to cook great fish soup.

2. Cut some fillet straws about 1 cm wide. Plentifully salt, add 2 tablespoons of vinegar and the crushed garlic. Mix and put for 1-1.5 hours in the fridge. If there are doubts in quality of fish, increase pickling time. Fish can be pickled up to day.

3. Grate carrots. Add to fish straws together with paprika, a coriander and other seasoning to fish on your taste. There pour out the remained vinegar. Carefully mix everything and leave for 1-1.5 hours until ready. The dish will look more appetizing if paprika is a hammer not to a condition of dust, and is slightly larger.

4. Wring out excess juice after the pike is ready. Learn, fish is ready or not, it is simple. If pieces of fillet turned white, then everything was well kept waiting.

5. Cut onions half rings, not really thin, fry on vegetable oil.

6. Poshinkuyte fresh cucumber straws. Add it to a dish with ready fillet. Lay out fried rings of onions together with oil.

7. Carefully mix everything and let's infuse within an hour then give to a table.
