1. To start squids it is necessary to defreeze if only you don't live in the country where they can be bought fresh. It is the best of all to shift for this purpose squids from the freezer in the fridge. It is the best way of a defrosting of any products, but also the longest. If you can't long wait, then defreeze carcasses at the room temperature. To accelerate even more process, put them in cold water. Don't put them at all in boiled water since squids prepare instantly, and further processing can spoil their gustatory qualities.

2. I used the cleaned carcasses, but if you bought crude, it will be necessary to pull out from them a transparent core and to remove a skin.
