Not everyone knows that true Russian pancakes are kneaded on yeast. The modern option of pancakes belongs to the European pancakes. The Russian pancakes turn out much more thickly, than usual, porous and magnificent.

Ingredients:

  • Milk – 3 glasses;
  • Yolks – 2 pieces;
  • Buckwheat flour – 4 glasses;
  • Yeast – 10 g;
  • Salt – 1 teaspoon without hill;
  • The oil kindled for lubricant – 1 glass.

Preparation:

  • Put eggs in a pan and fill in with cold water. Then to put to cook on a plate and when begin to boil, to continue to cook at weak boiling about 10-15 minutes that were hard-boiled. After this egg to cool and clean. Chop the prepared eggs average pieces.

Set aside dough for a raising. After a test raising for the second time, it isn't necessary to stir it any more that didn't fall down.
  • Put a frying pan on a plate and fill on it salts when the frying pan is calcinated, to pour salt, and to wipe a frying pan with a towel. Then to oil a frying pan kindled, by means of a special brush or by means of a goose quill. The frying pan shouldn't be too big in the diameter. There will be enough diameter up to 15 centimeters.
  • Small ladle to take dough and to pour on a frying pan. To strew from above with the cut boiled eggs. When the bottom is reddened, from above to oil pancake by means of a brush and to turn.
  • Remove and put ready pancakes in private that didn't cool down. Serve such pancakes with the kindled oil, fresh sour cream or caviar.
