Muffins – a kind of cakes. This dessert is made of wheat or corn flour with addition of various components: cottage cheese, fruit, berries, chocolate, nuts. It is required to time for preparation of such dish a little, and result it gives pleasure even to choosy gourmets.

Recipe of cottage cheese muffins

To make cottage cheese muffins, it will be required:

- 250 g of a desi or margarine; - 300 g of cottage cheese;

- 250 g of granulated sugar; - 500 g of flour; - 4 eggs; - ½ glasses of raisin (without stones); - 1 lemon; - ¾ soda tsps; - salt. For glaze: - 1 glass of icing sugar; - 3 tablespoons of currant juice.

Scald a lemon boiled water, accurately cut off a dried peel and rub it on a small grater. From ½ lemons squeeze out juice. Miss cottage cheese via the meat grinder, and sift wheat flour through a sieve.

Get butter or margarine from the fridge for softening in advance. Then in ware shake up a nimbus or the mixer oil with granulated sugar. Add one egg, a polished lemon dried peel and juice of a half of a lemon, cottage cheese, raisin, a salt pinch, flour and the baking soda extinguished in lemon juice. Carefully mix everything and knead dough - on consistence it has to remind sour cream. Spread out dough in silicone molds for muffins, filling them approximately on 2/3. Bake in an oven at a moderate temperature (about 180 wasps) within 25-30 minutes. Then get pastries from an oven, accurately take out from molds and let's muffins cool down. Then cover with glaze. For its preparation mix icing sugar with currant juice to uniformity. Dry the glazed muffins in a warm oven and decorate to the taste.

The recipe of cottage cheese muffins with chocolate

The following products will be necessary for preparation of cottage cheese muffins according to this recipe: - 250 g of soft cottage cheese; - 250 g of granulated sugar; - 1 egg; - 150 g of chocolate; - 200 g of wheat flour; - 30 g of cocoa powder; - 1 tsps of baking soda; - ¼ tsps of salt; - 250 ml of water; - 80 ml of vegetable oil; - 1 tablespoons of a table vinegar; - 1 tsps of vanilla essence. Warm an oven to 180 wasps. Lay out forms for muffins paper molds preparations. Shake up to smoothness in a small bowl soft cottage cheese with a part of granulated sugar (approximately with 50 grams). Add egg and mix everything in homogeneous mass. Grate chocolate and connect the turned-out chocolate shaving to curds. In a big bowl sift flour and mix it with the remained sugar, cocoa powder, soda and salt. Add water, vegetable oil, a 6% table vinegar, vanilla essence and mix all ingredients before receiving homogeneous mass. Fill with the made form dough for muffins half. Put in the center of each form on a full tablespoon of curds. Bake in an oven within 20-25 minutes while the wooden toothpick inserted into the middle of muffin doesn't remain dry after extraction. Then take out pastries from molds, completely cool on a lattice and give to a table. If desired muffins can be covered with lemon or orange glaze.
