From pearl barley risotto which children and adults destroy in a flash turns out fine creamy.

It is required to you:

  • 100 гр. pearl barley
  • 20 гр. dried mushrooms,
  • 2 tablespoons of olive oil,
  • 1 head of onions cut
  • 2 segments of garlic cut
  • 150 гр. brown rice,
  • 700 ml. hot vegetable broth,
  • 180 гр. fresh mushrooms,
  • 2 tablespoons of the parsley cut
  • 4 tablespoons of a polished Parmesan cheese,
  • Ground black pepper and salt to taste.

Fill in with water grain, bring to the boil and cook 35 minutes to softness. Drain water. Wet mushrooms for 15 minutes in boiled water, then cast away on a colander, having kept water. Warm a half of oil in a big frying pan. Put there onions and garlic, to fry them to softness.

Add pearl-barley porridge and rice. Mix broth and water from under mushrooms, to pour in the turned-out mix in a frying pan, continuously stirring slowly. Add dried mushrooms, salt, bring to the boil and reduce fire. Prepare without cover within 20-25 minutes until rice becomes soft, and the most part of broth won't be absorbed.

Meanwhile to warm the remained oil in a frying pan, to put there fresh mushrooms and to fry, stirring slowly with 20 minutes until ready. Connect the fried mushrooms to risotto, pepper to taste and mix. Give, having strewed dishes with parmesan and parsley.
